docs: Fix the README to match the repo - #17

The README promised templates the repo didn't have and linked a profile README that doesn't exist. Add bug and feature issue forms as org defaults, and list what the repo actually provides. Do not add these as they force use in all cases and we don’t actually need them in all cases
