Summary

align the documented Kafka topic inventory with the Helm-provisioned topics
reuse the OpenSearch render artifact in assertions instead of rendering twice

Verification

Helm lint passed for Redis, Kafka, and OpenSearch
OpenSearch chart validation passed
git diff --check passed

Related to the public release review in digital-bank-java/.github.
